He previously co-authored The Dead Rabbit Drinks Manual. Garret Richard is the head bartender of the Sunken Harbor Club, a tropical bar upstairs from the Gage & Tollner chophouse in Brooklyn, New York. Previously, Garret was part of the opening team at Existing Conditions, the groundbreaking bar by Dave Arnold and Don Lee that introduced high tech to a neighborhood haunt. Since 2017, he has helmed his pop-up, Exotica, bringing menus of reinvented tropical classics and new creations to a series of sold-out venues.
