Élise Desaulniers is an independent researcher and an animal rights advocate. Her first book on food ethics, Je mange avec ma tête [I Eat with my Head] was published in 2011, followed by Vache à lait, in 2013, a deconstruction of the myths surrounding the dairy industry, (Cash Cow, Lantern Books, 2015). She has co-authored two articles for the Encyclopedia of Food and Agricultural Ethics (Springer, 2014), and is often called to speak in colleges and universities. Élise Desaulniers lives in Montréal.
